Great book! It's got a good weight, the pages aren't thin but have a nice gloss. Classic cowboy recipes, fun stories and beautiful pics. Recipe for Lambshead ranch dressing is outstanding. A perfect gift for anyone who likes authenticity in food and in people.
Loved it. I gave it to a rancher friend. She loves to cook, and I love to eat her cooking. The picture of the Prime Rib Roast will make you want to eat the picture. Many great mouth watering things to make in this excellent cook book. It is even great for a "coffee table" book.
I discovered this book nosing through the mountain of cookbooks at the library.I had to have my own copy and ordered one from Amazon.I like the recipes and I like the view into a fascinating way of life that comes via the food and the photography.The recipes are straightforward rough and ready cooking, yet with some real surprises.Some recipes make enough to feed an entire ranch crew, but anyone with reasonable intelligence canscale them down as needed. Good stuff and a fun book.
Buttermilk Biscuits..... They are Easy and Tasty.... The recipe reminds one that the best biscuits are the ones worked the least. My husband (yes, my husband) mixed up a batch of dough this morning / divided it in half / baked half for breakfast with sausage gravy, and we will bake the other half for dinner. Even if the recipe isn't extremely magical, the full-page picture beside it will make your mouth water!Fruited Sourdough Rolls.....And if you would rather save the other half of the dough for dessert, turn to page 171 and turn it into Fruited Sourdough Rolls. But purchase a cast-iron skillet or a Dutch oven before you make it because you will never make cornbread, sweet rolls, or bread pudding in anything else again!Mountain Oysters..... Now THIS is a unique recipe that we began using after buying this cookbook. Before BB&B, we simply used our catfish batter recipe...Don't know what a mountain oyster is? It's the best appetizer you will ever eat at the end of the day after a long day of "working" livestock. See, when you are turning young bulls or young billy goats into steers or muttons so they "grow out" heavier before going to the sale, you must "cut" them. This is where you get mountain oysters.... Seriously, the kiddos can't wait for the "snacks" to cool off and seem to blister their mouths every time! Cooked to a crunchy state, they taste like extremely rich fried sea-grown oysters.Clear Fork Fish Fry.... This catfish batter is really tasty. The key to good catfish is cornmeal, plenty of salt, enough cayenne pepper to give it a nice Kick, and HOT grease. **NOTE** Do NOT mess with the frying fish until it starts rising to the top of the grease; otherwise, the batter will fall away from the fish. And fry that fish nice and crispy! No one will like "wallowy" fish.... And if you can't find catfish, any nice fish will work. The fresher the better!Salmon Croquettes.... Yum! Not fancy but out of the ordinary. I know that many folks have gotten completely away from frying food, but this is a treat! Cocktail sauce and tarter sauce on the side, served with cole slaw and sliced tomatoes... you can't beat it!Guacamole.... The lime is the secret! And chunky avocado is definitely best! The picture in the cookbook does not do this dish justice! Prepared as instructed in this cookbook, the dish will be a vibrant green. Don't be turned off by the picture. This guacamole, created like real Texas Mexicans make it, is absolutely my favorite food in the world!Looking back through this cookbook I do believe that the recipes are simple but extremely mouth watering. The story told in the cookbook could be part of a curriculum when studying early life in the American Southwest. This is my culture... My ranching family pushed cattle to Kansas and lived off of "Cookie's" cast-iron creations and we are still enjoying these traditions.I hope you enjoy cooking out of this cookbook as much as I have enjoyed sharing my favorites with you. It is indeed a cookbook to own!Enjoy!
If you like to camp out as much as I do, you would like this book. Lots of good recipes you can uses in the woods. I love cooking over the fire, and coals.
I first checked this out at my public library, but had to have a copy of my own. I have tried several recipes already and love every one of them. I am enjoying their section on sauces like Jalapeno Rasberry Sauce and Red Chile Butter. I am reminded of days past with their Onion Cucumber Salad, just like my gram used to make. The ingredients are what I normally have around the house, so that makes this just a very easy book to use and enjoy.
Bought one after visiting daughter and son in law in Texas. He prepared breakfast using recipes from this book. I just had to have my own copy, haven't prepared a meal as of yet, but almost every page bookmarked with something I want to make. Can't wait.
